Altitude is a factor that is often overlooked when consumers are selecting coffee, but it has a significant impact on a cup’s flavor, sweetness, and acidity.
High altitude areas (1500 m and above) create micro-climates that are relatively dry and cool. When coffee is grown in these climates the maturation of the trees is slowed down, prolonging bean development, which results in hard, dense beans.
Hard beans are more desirable because they contain a higher concentration of sugars, which are responsible for nuanced flavors that add sweetness, complexity, and acidity to brewed coffee.
All of the lots that are processed at the Yabitu Koba washing station are grown at a minimum of 1900 meters above sea level, with many producers contributing lots grown at nearly 2100 meters. These high-altitude, sugar-laden beans result in a cup with sparkling acidity, complex fruit flavor, and intense floral sweetness.
“Ethiopian Heirloom” is a generic term that refers to the vast number of coffee varieties that are present within Ethiopia (The current estimation is between six and ten thousand). Little genetic testing has been performed in order to distinguish between the Heirlooms because natural cross- pollination is constantly creating new varieties in the wild.
The lack of information regarding specific varieties presents some challenges that make sourcing Ethiopian coffees more difficult. A coffee’s variety usually provides importers and roasters with insight into flavor, body, acidity, etc.; losing that insight means that more time and resources must be allocated to find lots that match desired profiles. However, despite these challenges, “Ethiopian Heirlooms” are coveted because they produce coffees with highly unique and diverse flavors.
The varieties that make up this lot produce a coffee that combines dynamic stone-fruit and tea-like flavors, with a syrupy mouthfeel, and an impeccably clean finish.
